Produced at the Montenisa estate, the wine expresses all the variegated facets of a pure Chardonnay wine. Flowers and white peaches are the characteristic notes of its intriguing bouquet, which offers sensations of amplitude and great balance on the nose.
The color is a straw yellow with light golden highlights, the bubbling is creamy and dense with delicate and persistent bubbles. The palate is full and complex but sustained by a lively freshness.
The whole-cluster grapes are directly pressed, softly and delicately, and the finest part of the must, that from the first pressing, is fermented both in stainless steel tanks and in oak barrels. Towards the spring of the following year, the wine goes through a second fermentation, this time in bottle, and then ages on its less for a period of 60 months.
Particularly suitable as an aperitif along with hors d’oeuvres, the wine is an excellent match to pasta with fish sauces, baked or roasted fish, and white meat.
